Turkey Breast?
I am making a whole turkey breast Sunday, and I was wondering if anyone has any suggestions about Seasoning the outside of the bird?
Do you have flavors that you really like, or a way to keeo the bird super moist?

I always use just the basics: salt, pepper, garlic salt and some tony sacheres. (or season salt)
You can put the turkey in a foil packet and bake it that way to retain moisture, adding 1/4-1/2 cup chicken broth to the bottom of the foil packet.
Although this method will take a longer amount of time, it is well worth the wait.

Im making a turkey breast its been in the oven for 3 hours... when cut into half was a nice white meat and half was a darker pink meat? Is this normal... or is it not done? It cant be more than 3-4 lbs?
if it's smoked, weighs 4# and has been in a preheated oven for 3 hours then it's probably more than done. it's got color to it because it's been smoked.
How is a "turkey breast tenderloin" different from regular turkey breast?
I have a recipe I'd like to make this week calling for "turkey breast tenderloin" but the grocery store didn't carry anything with the word "tenderloin" in it. Is it just like normal turkey breasts? Is there something I should do to them? Any help would be appreciated!
If you look at a turkey breast, you'll see the bone go down the center, and 2 nice meaty pieces on either side of that bone. Those 2 big pieces are "tenderloins" ... as opposed to the whole breast with the bones, and meat around everything.... You can buy a whole breast, and cut the 2 tenderloins out, but I know that Kroger's carries them, as do other groceries. I think it might be "The Turkey Store" brand, but not positive...
Cooking tender turkey breast in a pot on the stove or crock pot?
I heard once a long time ago that to make really tender chicken breast or turkey breast that shreads easily, you should cook it in a pot of boiling water. I am making turkey breast and stuffing tonight for dinner and would like to make my turkey breast very tender so I can shread it up and mix it into my stuffing and bake it. Does anyone have any tips on how I can do this? And how much time it would make?
POACHED TURKEY BREAST

4 cups chicken broth or water
1 medium onion, stuck with 5 whole cloves
1 medium carrot, sliced
2 ribs celery, sliced
2 parsley sprigs
10 peppercorns
1 tsp salt
6 thin slices lemon
1 (4-5 lb) frozen turkey breast, thawed

In large kettle bring to boil broth, onion, carrot, celery, parsley, peppercorns, salt and lemon. Add turkey; bring to boil.

Cover, then simmer 2 to 2 1/2 hours or until tender and meat thermometer registers 170 degrees F, turning turkey occasionally.

TO SERVE COLD:
Cool slightly in broth, then refrigerate until cold. Remove turkey. Remove and discard skin from turkey. Slice the breast and serve on cold platter.

Have you roasted a Turkey Breast SIde Down?
I have a 20lb turkey and I have seen that if you roast it breast side down the breast stays juicy and tender. Has anyone tried this. Did you need to adjust the time or temp? Did you cover your bird? I am planning on cooking it unstuffed.
That's how I did my Thanksgiving turkey. It was great! Time and temp were the same. Well, temp was the same, but the time was a little shorter. I think that had more to do with my new oven than with roasting it breast side down. My turkey was 18 lbs and I cooked it unstuffed and uncovered. If you're feeling especially brave, you can turn it over when there's an hour left in the bake time to let the breast brown. But that's really a two person job, especially at that size :)

Generally, turkey breasts only do not come with giblets. If they do, they are enclosed in a little bag, and you can do with them as you wish. (They make good gravy).

I would do it for about ten minutes at high 400 heat. watch it carefully. The high heat is to brown it quickly without giving it time to dry out. If you have any browning spray or Kitchen Bouquet, that can give the look you want without drying it. Happy Holidays !
